Happy 2017 !




It is always fun to personalize your cake with melted chocolate! This cake is store-bought (Fig CheeseCake from A-1 Bakery), I just thought that it needs a little decoration to make it a new year cake. :) Happy New Year!

Chocolate Custard Tart

One of the easily made desserts, suggest to leave it in fridge for at least 3 hours for best texture and flavour.



Time prep: 40min
Chilling time: 3 hours total

Make Two 6" pies

Ingredients:

  Pastry:  Oreo cookies           8 pieces
              Melted butter           100 mL/ 6 Tbsp 

  Filling:    Chocolate Wafer    1/2 - 1/3 Cup
               Whole milk             3/4 Cup
                Butter                    1/4 Cup

 Topping:  Strawberry          Few for decorating 


Instructions: 

Pastry:
     1) Combined Oreo cookies and melted butter in food processor/ blender until its well mixed.
     2) Spray baking pie pan with a thin layer of oil, gently spread Oreo mixture on to pan to cover up the bottom and edge of the pan.
     3) Put in fridge for 15 mins.

Filling:
     1) In a saucepan over low heat, mix whole milk and butter, stir continuously till butter dissolved, do not bring it to boil.
     2) Added chocolate wafer, stir till melted and combined.
     3) Keep stirring until mixture thicken

Combine
     1) Pour chocolate mixture in to Oreo crust, chill in fridge for an hour.
     2) Dust icing sugar on top (optional), garnish with strawberry or your favorite fruits.

Cranberry Chocolate Waffer





















Ingredients: 
 Chocolate button/ melting chocolate                     1 Cup
Oreo cookie                                                               2 cookies
Dried cranberry                                                         1/4 Cup
Waffle cookie                                                            4 cookies



Instruction:
1) Use double boiling method to melt chocolate button, melt separately for different kinds.
2) Once melted, pour a thin layer of chocolate on aluminum foil, then put a thin waffle cookie on top.
3) Pour another layer of chocolate just to cover waffle cookie.
4) Sprinkle dried cranberries on top.
5) Use a plastic bag to make oreo crumble by rolling cookies over by a rolling pin, or  by hands (carefully remove oreo cream with knife)
6) Sprinkle oreo crumble on top.
7)  Use a fork or a piping bag to create pattern on surface using different kind/ colour chocolate.
8) Cover chocolate with another sheet of foil, then chill in fridge for 30 minutes.
9) Take out from fridge, use a heated knife to cut chocolate into desired shape. (run knife under hot water, then dried)

Butter cookies





Prep Time: 10 mins
Cooking Time: 15-20 minus

Ingredients

Butter,  room temperature     250g
Icing sugar                               100g
Egg                                             2
All purpose flour                      350g
Chocolate (for decorating)    150g


Instruction

1) Preheat Oven to 350F.
2) In a bowl, using an electrical mixer to cream soft butter and sugar until well combined.
3) Sifted in flour, mixed well. Beat in egg one at a time, mixed well.
4) Assembled piping bag and piping tip. Put dough in a piping bag.
5) Placed baking paper on a baking pan, piped a straight line/ rose shape or  dots to create patterns.
6) Baked for 20 minutes or until golden brown.
7) Removed cookies from baking pan, let cool for 15 minutes. Meanwhile, get prepared to melt  chocolate.
8) Using a double boiler methods to melt chopped chocolate until it reached liquid consistency.
9) Two methods to decorate: a) dipped cookies in chocolate batter or used a spoon to pour chocolate on top of cookies. b) Used a piping bag to create thin chocolate lines or patterns on cookies, using a piping bag can create chocolate drizzle very nicely.
10) If you wish to decorate cookies with  chocolate, make sure to do it before chocolate cools down, I would finish chocolate coating/ dipping in a small batch, and then sprinkle some granola, almond slices ( it can be anything, such as marshmallow etc.) on top, before coating chocolate on second batch of cookie.
11) Dusted icing sugar on surface if you wanted
12) Ready to serve!

Chocolate munchies





Super Easy Treat. It only takes as little as 10 minutes to make!
Ingredients: 
Chocolate waffer     handful
Dried fruit               handful
Granola                   handful

Direction
1) Using double boiling methods (Click here for method) to melt chocolate
2) Poured mixture in a piping bag or a ziploc plastic storage bag, cut one corner to create a hole
3) Placed a baking sheet on a baking pan, gently pipe/ squeeze chocolate mixture onto baking sheet.
4) Created any shape you like on the sheet. 
5) Sprinkle dried fruit and granola on top*
* It doesn't take long to cool down chocolate mixture, be sure to sprinkle dried fruit and granola before it gets hard, so that they will stick onto chocolate. Used a fork or dried  fruit touch gently to test if chocolate has been hardens.
6) Chocolate should be harden within 10 minutes, removed from baking sheet by gently peel off baking sheet. 

* Avoid placing chocolate under sun or on hot surface

Nutella Swirl Pound Cake

I have been trying to clean out my fridge, and noticing that I have quite a lot of fat ingredients sitting  in the fridge. Since I have a jar of Nutella left, I thought I would add some in today's recipe.


It is a quick bread recipe, it is very easy and fast to make. Combine all ingredients together, mix well then it is done!



Here is the ingredients you need:


Butter (placed in room temp.)     3 Tbsp/ 50g
Cream Cheese (room temp.)       1/2 C,  100g
Sugar                                           3 Tbsp / 50g
Egg                                               2
Cake Flour                                   1 C/ 120g
Baking Powder                            1/2 tsp
Milk                                             1 Tbsp
Vanilla Extract                            1 tsp
Nutella                                         2 Tbsp


Instruction:

1) Pre-heat oven to 360F
2) Cut baking sheet place for a baking pan for the size of 4" x 11"
3) In a bowl, using an electrical mixer to beat cream cheese and butter which is placed in room temperature for at least 20 minutes until well mixed
4) Beat in sugar.
5) In another bowl, beat 2 eggs
6) Slowly beat in beaten eggs in 3 portion into the batter, mix well before adding another portion of egg mixture
7) Using sifter to shift flour into batter, mix until well blended
8) Add is baking powder and vanilla extract, mix well
9) Once your mixture is ready, spoon 1/3 of batter into another bowl, mix nutella until cooperated
10) Now you have 2 colour of better, pour nutella batter on top of the original batter, using a spatula to cut through batter using a "8" motion. (as if you are writing the number 8 when mixing the batter)
11) Slowly and gently mix using the 8 motion for about 8 times
12) Pour batter into pan, gently smoothen the surface
13)To create a pattern on surface, use a toothpick/ skewers or chopstick and dip in nutella, gently draw lines across the surface of the batter
14) Using another clean toothpick, ( not dipping in nutella this time) draw across the surface in an opposite direction. (if you draw your line with nutella across horizontally, you need to draw across with a clean toothpick from the top to bottom)
15) Bake for 30 minutes or until insert comes out clean

Rice Kirspy Chocolate Bar

Here is a simple idea of foodie gift. Fast and Easy. Great for a thank you gift, bride gift or a "sorry" gift.



 Ingredients:

~handful of chocolate wafer melt ( melting chocolate)
    I get my chocolate wafer at bulk barn, which is a franchise snack/ baking store store in Ontario. I get as much as you want in a bag and purchase it by weight.

~ handful of rice crispy


Instruction:

~ Pick out a chocolate mold, ( I have used an ice cube mold, baking pan, pretty much anything that can hold liquid, but keep in mind that, to narrower the container, the better.)

~ Using double boiler methods to melt chocolate, be careful not to mix chocolate with water.
  ( I used microwave does the melting, make sure to mix chocolate content every 20 seconds)

~ Pour a layer of chocolate on the bottom of the mold, and sprinkle a rice crispy on top, spread evenly.

~ Cover with plastic wrap, put in freezer for 10 minutes. Meanwhile, prepare next batch of melting chocolate, if you want to do a different colour layer.

~ Take chocolate bar out of the fridge, pour next chocolate layer on top, smooth surface with spatula or a spoon. Put chocolate back to fridge for another 10 minutes

~ Used leftover chocolate mixture to create chocolate garnish on top, put chocolate mixture into a piping bag, and create any garnish you want.

Rice crispy S'more chocolate bar




It is America thanksgiving day! It is also best known as BLACK FRIDAY, black Friday is always on the last Friday of November and people shop crazily for good deals in store and celebrate thanksgiving with their close ones.

We were having a black and white theme bake sale at work for fundraising. I thought I would make something that are easy to make and bring,and require minimum baking.


Here is what I ended up making. Rice Crispy S’more Chocolate bar!



Ingredients:

* Amount of ingredients depends on the quantity you are making, and how you want to design your chocolate bar. 


Various melting chocolate wafer/ melts

Rice Crispy

Almond chopped  or whole

Oreo cookies bites / pieces

Small marshmallow



Direction

1)      Melted chocolate pieces in a bowl using double boiler method or using microwave.


2)      Traced a baking pan on a piece of baking papers or wax paper, cut and place on the bottom of the pan.


3)      Poured melted chocolate in pan while still warm.
4)      Added a thin layer of rice crispy on top.
5)      Placed pan in fridge for couple minutes.
6)      Repeated step one for other kinds of chocolate.
7)      Poured other chocolate layer, let cool.
8)      Before top layer of chocolate set, placed oreo bite, almond and marshmallow on top.
9)      Added a little chocolate drizzle on top.
10)   Put in fridge to help cooling faster.
11)   Turned pan upside down to help getting out chocolate bar
12)   Ran a big knife under hot water, dried with paper towel, cut chocolate  into desired size.


Be creative, add any ingredient you like in this recipe. Packed them in the little bag, making it a easy sweet treat  gifts for others.

Easy Chocolate Mousse for Beginner

Make 4 servings

Preparation time: 5 mins

Cooking time:  10 mins


Ingredients

Whipping cream 35%                          1 Cup
Milk chocolate (over 75% choco)        100 g
Vanilla extract                                      1tsp
Icing sugar                                           2 Tbsp


Methods

1) Chilled bowl and whisk for 15 minutes to ease beating cream.

2) Chopped chocolate into small pieces.

3) Filled water half full in a small pot, and boiled, placed a bowl on the pot, sitting right on the edge.

4) Put chocolate in bowl, stirred until smooth and melted. Set aside.

5) Using chilled bowl and whisk, beat cream until soft peak.

6) Added in vanilla and sugar, beat until stiff peak.

7) Folded in 1/4 of the cream into chocolate mixture, fold mixture from the bottom to the surface, repeated until blended in.

8) Folded back chocolate mixture in to rest of the cream using same folding technique.

9) Once mixture is well combined, serve immediately or refrigerate for later use.

Black forest fudge cake


 


Make two 4" round cake                                               Preparation time: 10 mins
                                                                                     Baking time: 30 mins
Ingredients
250g eating milk chocolate, chopped
125g butter, chopped

2/3 C icing sugar
2/3C self-rising flour
4 Eggs


Methods

1) Preheat oven to 180C, sprayed baking pan with oil, cut and placed baking paper on baking pan. (* traced the edge of the pan on baking paper with a pen, cut paper extending 5 cm above sides)

2) Boiled a pot of water, placed a glass/ ceramic bowl in the pot.

3) Put chopped chocolate and butter in bowl, using spatula to stir ingredients till melted.
 (* Be extra careful not have the chocolate mixture contact with water, and do not have glass bowl touching the bottom of the pot; the concept here is to use the heat/ stream to melt the chocolate and butter, NOT to boil them)

4) In a big bowl, put sugar, flour and beaten eggs, mixed well with electrical mixer or whisk.

5) Once mixture is well mixed, slowly poured chocolate mixture into big bowl, using electrical mixer in low speed to mix mixture for 3 minutes, (Do not over-mix, you may see some bubbles when mixing, we do not want to over-mix which would destroy the bubbles and the structure of the cake)

6)Poured mixture into pan until skewer comes out clear when inserted.

7) Melted chocolate and made whatever shapes to want to decorate your cake when it is cool!

Black & White (Double) Chocolate Cookies

Chocolate is one of my fav treats!

I wanted to make something for my friends as a "very last exam day" gift!

This recipe only took me 2 hours to finish, as I was supposed to study for the exam, something that was quick and easy would be perfect activite for a study break.



Serving Size: 20 (3 inches long) cookies

Ingredients:

Butter/ margarine , softened        1/2 Cups
White sugar                                 3/4 Cups
Egg                                              1
Vanilla extract                             1 teaspoon
All purpose flour                         1 Cups
Cocoa powder (unsweetened)     1/4 Cups           
Baking soda                                1/2 teaspoon
Salt                                               1/4 teaspoon
White chocolate chip                   1/2 ~ 3/4 Cups


Procedure:

1. Preheat oven to 350F/175C. Spray a thin layer of oil on cookie sheets for later use.
2. In a bowl, mix soften butter and sugar with a spoon until smooth. Beat in egg, and vanilla extract.
3. Sift in flour, cocoa powder and baking soda in to creamed mixture. Add in salt.
4. Fold in chocolate chips.
5. Drop a spoonful dough/ mixture on the cookie sheets. * Cookies will spread during baking, make sure leave enough space between, so that they won't stick together.
6.Bake for 6 to 8 minutes or until they are set.

Tips:
~Always allow cookies to set and cool down before removing cookies from cookie sheets.
~ Measure all ingredients before mixing/ cooking/ baking, and measure dry ingredients then wet ingredients, it helps saving time from cleaning extra utensils!
